Curried pasta - 2007 's thanks giving dinner


To my astonishment , this turned out real good.

Curried pasta



Ingredients
Barilla Rotini Pasta - 1 pack

Red onions - 1 medium sliced , scallions if available - chopped ( puts taste in over-drive)
zuccini - 2 diced
2 tomatoes
4 cloves garlic
1 jalepeno - sliced
1/2 teaspoon cumin seeds
1/2 teaspoon paprika
2 teaspoons salt
3 tablespoons E Virgin olive ( EVO) oil
fresh cilantro
1 lime freshly squeezed
1 red chilly

Preparing the Pasta

Prepare the pasta as per the directions . Personally I like to cook the pasta a little longer >10 mins as it eliminates the rubbery taste of the pasta . Drain the pasta and spread little EVO oil to prevent the pasta from sticking .

Pasta sauce
Blend 1 tomato , 2 cloves of garlic , cummin seeds , red chilli adding half of the lemon juice .
Making it happen
Heat , add EVO oil ,
Add crushed garlic pods.
Add Jalapeno
Add onions - cook for 1 min
Add diced zucchini
cook for 2.5 mins
add tomatoes
add salt
cook for 2 mins
add the pasta
stir well till all the flavor from the garnishing blends into the pasta
add basil leaves( sprinkle) , rosemary( 2-3 strands) and oregano(sprinkle)
stir well, allowing the pasta to take all the seasonings !
add paprika and salt if needed for the pasta
stir and cook for 1/2 minute
add the pasta sauce
stir well
cook for 2-3 mins and remove heat
Add Grated parmesan cheese and stir
Add finely chopped coriander leaves
cool for around 1 min
Serve and say Happy Thanksgiving !
